Masala pav sandwich

Ingredients:-

1 medium sized finely chopped onion

2 medium sized finely chopped tomatoes

1 medium sized finely chopped capsicum

2 tbsp green chili ginger garlic paste

½ tsp jeera

¼ tsp haldi powder

1 tsp red chili powder

2 or 3 tbsp pav bhaji masala

2 tbsp butter or oil

1/3 cup water

Salt to taste

4 to 5 pav, sliced in halves

1 to 2 tbsp butter for toasting the pav.

2 tbsp lemon juice

2 tbsp finely chopped coriender

For assemble:-

1 boiled sliced potato

few sliced tomatoes

few sliced cucumber

2 tsp chat masala

Method:-

First slice all the pav and keep aside.

Heat a pan. Add 2 tbsp butter or oil. Add jeera and let them splutter.

Add the chili garlic ginger paste. Saute it till the raw aroma goes away.

Add chopped onions. Saute it till they turn translucent. Add chop tomatoes. Saute it for 3-4 minutes on a low flame.

Then add haldi, red chilli powder, pav bhaji masala. Stir well with the onion tomato mixture. Now add the finely chopped capsicum and saute it for 1 min.

Add salt to taste. Stir well. Add 1/3 cup water.

Adding water softens and cook the tomatoes very well.

The mixture will thicken and reduce as it simmers.

There should not be a lot of liquids in the masala, as then this will make the pav soggy. Add lemon juice.

Heat the tava. Add 2 tsp butter. Keep the flame low and spread the butter all over the pan. Now add 2 tbsp of mixed masala and saute for seconds in low flame.

Do not increase the flame. It will make the masala burn. Now add some finely chopped coriander. Mix well.

Open the pav and place it over the tava. Quickly move the pav all over the tava For the masala. Coat well on both sides.

Remove the pav and arrange the slices of tomatoes, potatoes and cucumber in one side. Sprinkle chat masala. Close the pav.

Serve hot.
